Nana’s Scottish Cookie Recipe
If you’ve been to our Scottish Night celebrations in January, chances are you’ve gotten the chance to try our homemade Scottish Shortbread. But did you know that it’s actually a special family cookie recipe passed down from Stephen’s Scottish grandmother, Nana Macdonald?
We were so thrilled to hear so many of you have enjoyed the cookies so far, and as we consider you all family, we have received permission to pass the recipe on to you! See below, and be sure to let us know if you make some of the cookies yourself! We’d be happy to help do a taste test…
Nana’s All Butter Shortbread Recipe
2 cups butter (1 lb)
2 1/2 cups flour
1 1/2 cups cornflower (cornstarch)
1 1/2 cups powdered sugar
Raw sugar and Granulated sugar
Mix butter, flour, cornflower, and powdered sugar until it forms a lump. Roll (1/4 of it) into a long sausage shape (around 6” long). Roll the outside in raw sugar. Slice into 1/4” rounds. Prick each round with a fork. Bake at 325 degrees for 15-17 minutes. Sprinkle granulated sugar on top immediately after pulling the pan out from the oven and let sit for 5 minutes before moving. Makes roughly 48 cookies.
